Our company is strategically located in one of the best fishing areas of the North Coast of Peru.
It began operations in the year 2008 with a plant of frozen fish and seafood located in Tierra Colorada, Paita, Piura, Peru, with a capacity of freezing of 52 MT per day in 4 plate freezers and 02 tunnels static, offering to its customers or strategic partners a guarantee of storage up to 1,000 metric tons of finished products in its 04 cold storages of 250 MT capacity each.

The plant has the following certifications:
- Protocol Enabling N. PTH-074-15 Awarded by the Sanipes, Enabling Health
P304-PAI-PSNV
- Certificate of verification HACCP N. 023-2016 issued by the Sanipes on February 12, 2016.
- FDA Registration N°12122642200 (The plant has been inspected by the FDA and approved on March 10, 2016).
- Our establishment is registered and enabled by the Sanipes to export to China, Thailand, Korea, Vietnam, Argentina, Venezuela, European Community, etc.

A. GIANT SQUID (DOSIDICUS GIGAS) (According to customer orders):

• Coded Raw Wings:

  1. This is commonly what Pesquera Nivama has been produced concerning of the raw wing, but customer must decide if you want cartilage or without cartilage.

    As listed below are the technical specifications of the raw wings:
    -Raw fin or wing 
    Depends upon the order by the customer, if it is with cartilage or without the cartilage

    Everything is used and the sizes of the raw wings are divided into the following presentations:

II. FROZEN COOKED PRODUCTS OF GIANT SQUID:
• Daruma or boiled giant squid fillet:

  1. Daruma or boiled giant squid fillet has a different presentations and this is one of the common ones that Pesquera Nivama has been already produced often. Here the technical are the technical specifications:
    Boiled giant squid fillet (daruma, 30% belly part accepted) and 10% overweight.
    Packaging: in 4 blocks x 7.0 kg and it is packed in bag of 28 kg 

• Boiled wings : Specifications:

  1. This is commonly what Pesquera Nivama has been produced concerning of the boiled wings.
    As listed below are the technical specifications of the boiled wings:
    The wings are cooked with skin, the color pink is the skin cooked. The product is cooked by 40 minutes at 98 Celsius and when the product of wing is cooked, the color turns to be purple. 
    Packaging: in 4 blocks x 7.5 kg and it is packed in bag of 30 kg 

• Frozen Cooked Squid Whole Tentacles:

  1. Whole Cooked Squid Individual Tentacles: 
    This is the description of the product:
    Individual cut, minimum diameter 0.5 CM. at the thinniest part, 48 minutes in water at 98 degrees Celsius, Fresh Frozen, quality: "A" grade, Free of chemical treatment.
    Packaging: in 4 blocks x 7.5 kg in a bag of 30 kg  

• COOKED SLICED SQUID REPRODUCTIVES TENTACLES (Octopus Style):

  1. The specifications of the production of the cooked sliced of reproductives tentacles: 
    The sexual is cooked with skin and without nails.
    Cooking time: 15 minutes to 18 minutes.
    Cooking temperature: 95 to 98 degrees Celsius.
    The slices are cut into chunks or pieces from 1 cm to 1.5 cm (0.4-0.6 in) width or thickness
    The tips do not go.
    The diameter range of the slice is from 1 cm-4 cm
    The packaged is iqf.
    The packaging is without glaze
    Chemical Free

• COOKED SLICED SQUID TREATED TENTACLES (Octopus Style):

  1. The specifications of the production of cooked sliced squid treated tentacles
    The tentacle is cleaned from the suction cups and the nails are removed, then the tentacle without nails with skin is treated in 300 kg bins with ABC2D (Granotec) and CAFODOS-D (Granotec) for a time of 28 hours of chemical treatment to eliminate the acidity, to eliminate the ammonia smell and make the texture of the tentacle muscle smooth as the reproductive or sexual tentacle.
    Cooking time: 48 minutes to 50 minutes.
    Cooking temperature: 95 to 98 degrees Celsius.
    The slices are cut into chunks or pieces of 1 cm to 1.5 cm (0.4-0.6 in) width or thickness.
    The tips do not go.
    The diameter range of the slice is 1 cm- 4 cm
    The packaged is iqf.
    The packaging is without glaze.
     

III. FROZEN IQF PRODUCTS ("READY TO EAT"):

  1. • HGT Whiting or Hake (Gayi Hake).
  2. • Cooked Sliced Squid Treated Tentacles/ Cooked Sliced Squid Reproductives Tentacles (Octopus Style).
  3. • Squid Rings from giant squid.
  4. • Seafood Mix (according to each costumer's specifications).

Bridge pier measured 200 meters X 5 meters of width and the head 50 meters x 12 meters in width. It has a depth of 16 meters to half tide.


We have for your service, a secure dock for the work of reception of any variety of our sea hydro-biological products


Our dock is always working to comply with fisheries legislation and safety standards.

FROZEN PRODUCTS PLANT:


Area of reception of raw material. In these areas are parked the units (trucks) of discharge or download hydro-biological products.

ROOM CANNED:

It has an area of 40 x 60 m2 approx.
Also, we have within the area, a production office, and a temporary store of supplies.

ENTERING ROOM PROCESSES:


Sanitary Area: Located at entering frozen plant, and it is performed the disinfection of hands and boots of all staff.

RAW MATERIAL RECEPTION ROOM:
It is attached to the primary process room

PRIMARY TREATMENT AREA:


Here are the primary processes. This room has an area for the disposal of waste and discards.
Climate control area and it has good lighting.

PACKAGING AREA:

Pesquera Nivama counts with its own packaging area of different products.

*Independently, our company counts to process die-cutting rings of giant squid that consists:

2 manifols 1 1/2 in. with output of 1/2 in. to connect the guns through a hose which leads jacks or connectors of diffent sizes, each manifold has 6 outlets for die-cutting in total would be 12 outputs. We have tables of stainless steel for the process of squid rings.

Note: die-cutting depends on measurement and customer specifications. therefore, Pesquera Nivama will adjust and will also make changes from measures into die-cutting according to each costumers's specifications.



The area is fully illuminated and climate control area.

FREEZING AREA:
We have 4 plates freezers that shift of 2.5 hours freeze 5 MT.


In addition to 2 tunnels static, they freeze at 12 hours 12 MT of product in any presentation.

VACUUM PACKING AREA:
Machines Vacuum double hood packed in shifts of 12 hours 05 MT of any product


This area is also equipped with a vertical cutting of stainless steel for all types of cutting any variety of products.

FREEZE INPUTS:
We have approximately 2000 baskets to frozen IQF products.

PACKAGING WORK TABLES:


Also, we count with aluminum rings with their respective plates for 4 freezers.

AREA OF GIANT SQUID COOKERS:

This cooking area counts with 06 cookers has 600 kg for each one and four coolers for heat shock, the transport of the racks is with electric tecle.
It is independent the water supply lines for each cooker and for each cooler, setting the hose directly to each cooker and to each cooler, ensuring the safety of water and thus avoid contamination by foreign agents.


We also have ten baskets that are in constant maintenance to perform the work of cooking more effective.

FINISHED PRODUCTS STORAGE AREA:


We have 04 cold storages, with capacity of 250 MT each, we are a company with prestige in terms of cold storage (ambient temperature in cold storage -20 C to -23 C) and also, in terms of safety in the custody of their stored products.

AREA OF SHIPMENTS:


Our shipments are made in this area, which we have always in the best hygienic conditions and with the best security measures in the area.


In addition, you can embark simultaneously two containers a carefully coordinated 24 hours a day.

DESALINATION PLANT FOR PRODUCTION OF DRINKING WATER FOR THE PLANT AND FOR THE LOCAL SALES:

Has a desalination plant composed of 03 units of production of drinking water by reverse osmosis to obtain for approximately 480 m3/day; that allows us to meet the demand of 150 m3/day of water required for processing of our products and have availability of 330 m3 to supply neighboring companies with this element of vital importance.
Seawater is pumped to a storage pool that is located within the desalination plant. Adding calcium hypochlorite to water from the pool of storage, until to obtain a concentration of 0.5 ppm, in order to lower the bioburden or microbial load.
Then the water is sent to media tanks, where through filtration suspended and sedimented solids are reduced.
Immediately after injected chemicals such as the metalsulfito and antiescalante at the entrance of each of the water pipes that go directly to each unit of production, using a system of metering pump, this will remove the residual chlorine free to avoiding damage to the membranes. The water is desalinated in the membranes through reverse osmosis and this obtains thus drinking water.

TRAININGS:
Our staff is constantly trained to perform tasks in our plant.

SUPPLIES STORAGE AREA:


Our bins are for approximately by 13 MT treatment of product. And be able to store in isothermal bins by 10 MT.

The office of the administrative staff is located in front of the reception area of the raw material.

OUR PROCESS:

Pesquera Nivama maintains a high level of quality control throughout the whole process. It begins with buying raw products directly at the docks, guaranteeing freshness from the start. 

After buying from local fishermen, our fish is then thoroughly cleaned before being shipped to the processing plant, this way we prevent any contamination to our product.

1.ORIGIN
We buy directly from local fishermen and transport the catch to our processing plant.

2.RECEPTION AND WEIGHING
Our fresh catch is weighed in as soon as it arrives at our location.

3.CLASSIFYING
Once weighed in our product is rigorously cleansed and classified.

4.SANITATION
The personnel that handles our products follows strict sanitary rules.

5.PROCESSING
We immediately process the seafood to maintain freshness and quality.

6.PACKAGING
Once our product is processed, it is packed under strictly quality control supervision.

7.FREEZING
We freeze our packed product immediately to assure quality in our products.

8.LOADING
Our containers are loaded in a quick and efficient manner, maintaining our product frozen at all times.

9. SHIPMENT
We monitor the delivery and documentation until the cargo reaches its final destination.

I. GIANT SQUID (DOSIDICUS GIGAS):

The cold waters of the eastern Pacific Ocean is home of a supreme cephalopod, source of tenderized steaks, squid rings, squid fries, squid buttons and sliced tentacles. We purchase only the day catch from small 5 ton artisanal vessels which provide us with the freshest of squids. We work only in the southern cold waters of Peru where squid has low acid content and is of much higher quality. This allows us to produce chemical free squid products, although on very large specimens we can use whiteners and tenderizing agents with the client's approval.
